How to make Chicken Caesar Salad Wraps in 10 minutes

Step 1: Pick up a rotisserie chicken from the store

A rotisserie chicken at the checkout line at the grocery store will become your new best friend! I love using them to make dinner in a hurry

You can also use cooked chicken breasts – many times I will cook them in the slow cooker with a can of chicken broth on low for 4-5 hours and then cut it into bite-sized pieces and it works perfectly.

Whatever kind of chicken you use, cut or shred it into bite-sized pieces and toss it into a big bowl.

Step 2: Add some shredded lettuce

I love using romaine lettuce for this recipe – it’s really crisp and crunchy, which I feel pairs well with the other ingredients.

It is also what is commonly used in Caesar salad, so might as well stick to what works.

You can buy a head of lettuce and cut it up yourself or most grocery stores sell cut up romaine lettuce – just another one of my favourite shortcuts to use to make my life easier!

Add the lettuce to the bowl.

Step 3: Add in some vegetables

I know that my kids like tomatoes and carrots in their salads, so that is what I chose to stick with for this recipe.

I used pre-shredded carrots, but feel free to shred your own if you want.

I also used cherry tomatoes and just sliced them to make them a little easier to use in these wraps. Roma tomatoes would also be a great tomato to use in this recipe.

Other vegetables that you could add to these Chicken Caesar Salad Wraps:

diced cucumbers

black olives (is that a vegetable?)

sliced or diced bell pepper (red or green would work great)

diced artichokes

broccoli florets

fresh spinach leaves

Whatever vegetables you end up using, toss them into the bowl.

Step 4: Add in Parmesan cheese

For this recipe, fresh shredded Parmesan cheese will taste amazing. However, not everyone always has time to shred cheese . . .

Today I bought a bag of shredded Parmesan at the grocery store and tossed a handful into the bowl.

If you are in a pinch, you could also use grated Parmesan cheese (the powder cheese that comes in a container), but it might taste a little different.

Step 5: Add in your favourite Caesar salad dressing

Creamy salad dressings like Caesar dressings sometimes are loaded with a lot of calories and are not that good for you.

I used this Bolthouse Farms Creamy Caesar dressing – it’s actually made with yoghurt and has 45 calories per serving . . . and it tastes AMAZING (which is the most important part . . . am I right?!). This dressing is in the refrigerated produce section at my store (it has to be refrigerated because of the yoghurt in it!).

Pour dressing on top of ingredients in the bowl and mix it all together!

Step 6: Wrap it up!

Now just scoop some filling onto a tortilla (you can use store-bought or if you are feeling really domestic, feel free to make your own tortillas!) and roll it up.

You are good to go! Dinner is done in 10 minutes flat!

Easy Club Chicken

It only takes four ingredients to get this chicken on the table for dinner! Your family will LOVE our Easy Club Chicken and it will quickly become a favourite in your rotation of meals.  You know those nights where it’s suddenly 4 o’clock and you haven’t even thought about what could possibly be for dinner? It was on one of those nights that this recipe was created! Who knew a main dish with only four ingredients could taste SO YUMMY.

Ingredients needed for Easy Club chicken

Four ingredients don’t sound like a lot, but you’ll be surprised at how flavorful this chicken ends up being!

Chicken

Frozen chicken breasts are something I always try to keep on hand. We buy the big bag at Costco and thaw what we need throughout the month.

The chicken breasts are usually so large that we can get two people fed out of each one. Totally worth the investment, and one of the few things I’d recommend buying in bulk.

Club Crackers

We use these Keebler Club Crackers in this recipe, but there are a lot of crackers you could use in this recipe. Ritz crackers would also be great! You’ll want something that crumbles easy and has a little bit of salt.

Italian Dressing Seasoning 

We love using Good Seasons Italian Salad Dressing Mix in a lot of our recipes! The flavour is amazing and it’s a great way to jazz up almost any recipe, especially chicken. This is also great tossed with potatoes!

Butter or Eggs

You’ll need to dip your chicken in butter OR eggs before coating it in the crumb mixture. We used butter in this specific recipe, but a whipped egg would also work. Just make sure your chicken is fully coated in the crumb mixture afterwards.

For a softer breading, drizzle a little bit of the extra butter over your chicken before baking.

How to make easy club chicken

Anyone who eats your Club Chicken will think you spent HOURS prepping this easy dish! Here’s how you do it.

  1. Crush up your crackers using a rolling pin or pop them in the blender for a few seconds.
  2. Whisk together your cracker crumbs and Italian dressing mix until well combined. Set aside.
  3. Melt butter in a separate small bowl.
  4. Dip each piece of chicken into your butter and then into your crumb mixture to coat evenly.
  5. Place chicken on a greased, foil-lined pan and bake at 375 degrees for about an hour, or until the internal temperature of your chicken reaches 165 degrees.

 

Sticky Sesame Chicken Recipe

Ingredients

2 pounds popcorn chicken frozen

6 Tablespoons honey

4 Tablespoons ketchup

4 Tablespoons sugar

2 Tablespoons white vinegar

2 Tablespoons soy sauce

Salt and Pepper to taste

2 cups cooked rice

3 green onions diced

1 teaspoon sesame seeds optional topping

Instructions

Cook popcorn chicken as directed on package.

In a saucepan over medium heat, whisk together honey, ketchup, sugar, vinegar, soy sauce and salt and pepper. Bring sauce to a boil while stirring and simmer for a few minutes until sauce slightly thickens.

Toss cooked chicken in sauce and serve over rice.

Garnish with green onion and sesame seeds.
